Description
LIMITED EDITION WASHED CO-FERMENT: Finca El Mirador, a 32-hectare farm in Pitalito, Huila, grows a wide range of coffee varieties – Catiope, Gesha, Mokka, Tabi, and multiple Bourbons – with highly standardized harvesting and processing. Producer Elkin Guzman tailors fermentation methods such as maceration, lactic and acetic naturals. A Pink Champagne washed process is used for this lot of Catiope, created by crossing Caturra with Lineas Etiopes. After planting it on his farm, Elkin fell in love with the Catiope variety for its production and cup quality. Cherries are carefully sorted, depulped, fermented with a spiced fruit culture for 140 hours, and dried for 25–30 days. The result is a vibrant, complex coffee our team selected at the Specialty Coffee Association Expo – North America’s largest trade show for the industry. Our team tasted strawberry candy, guava, rosewater, and rhubarb.
