Sugarcane process decaf, also sometimes known as Ethyl Acetate or ‘EA’ processing, utilizes two natural, food-derived byproducts of sugarcane fermentation (ethanol, the alcohol found in beer, wine and spirits, and acetic acid, a naturally-occurring acid prevalent in tropical fruits as well as many vinegars) to pull caffeine out of green coffee without negatively impacting its flavor.
